Chocolate Coconut Cookie Sticks

I love the first Thursday of the month because that means it is time to Fill the Cookie Jar.  This month I found something something so exciting to show you…. Cookie Sticks.

  I had so many ideas that I wanted to make but as per usual I waited till the last minute to make anything…. well, maybe not exactly the last minute as I did make these a few days ago, but as I had to work until show time, I needed to make something that wasn't too hard to make.   So, as I didn't have time to make fancy cookies and decorate (which was what I wanted to do) I went to my favorite place to find something that I could make quickly and would be perfect to fill the cookie jar with.
I adapted this recipe from Cookies and Cups and I also have to let you in a little secret... I kind of stole her presentation of these cookies... I loved the way that she put the cookie sticks in a cup.. So I did the same.. What do you think?

Chocolate Coconut Cookie Sticks


Ingredients:
1/2 cup coconut oil (I used organic Spectrum Coconut Oil)- melted
1/2 cup sugar (I used Zulka Morena Pure Cane Sugar)
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 tsp coconut extract (I used Walkins)
1 1/4 cup flour
1/4 cup cocoa (I used Ghiraridelli premium baking cocoa powder)
1/2 tsp baking soda
1/2 tsp salt
1 cup M&M

Directions:
Preheat oven to 375 degrees Fahrenheit.
Mix together oil, sugar, egg, vanilla and coconut extract.
In separate bowl mix together flour, baking soda and salt.  
Slow mix flour mixture with wet ingredients until mixed well.
Divide dough in half.
Spread out each half into approx 3 - 4 inch by 15 inch strips on cookie sheet covered with baking mat or parchment paper.  (I used my pamper chef roller to roll out the dough, the width of the roller).  I tried to have my dough about 1/4 inch thick throughout.


Add M&M to dough.  You could place them randomly or I place 4 across in a line about 1 inch apart.
Bake for 8-9 minutes.  
Take Cookies out of the oven and cool for 5 minutes.
Cut cookies into strips and either place them on a cookie rack or leave them on the cookie sheet to continue to cool.

Enjoy these yummy chocolaty sticks with a hint of coconut.
Perfect with a great cup of coffee or tea.
Whip up a batch for your Easter brunch.

  1. I will be making these! Maybe today even. My husband has changed his type of trucking and desperately wants new treats. These would travel so well, and would be easy for him to grab and eat!

  7. Marlys, I really love these- sort of unusual, not your same old cookie! (And yes, the presentation is great!) They'd be perfect any time of year- just change up the color of M&Ms. I love to bake with coconut oil- these would be good with flavored or unflavored, either way.
