It is time again for our Crazy Ingredient Challenge. This month our ingredients are Orange (or Citrus) and Breadcrumbs.
Oranges are the best at this time of year. I very seldom buy them any other time of year, but in the winter I eat them until I get cankers (the biggest downfall of citrus fruits). So when the chosen ingredients were oranges (or citrus) and breadcrumbs I had no problem coming up with something to make. Both chicken and fish work well with any citrus fruits. I had some Tilapia in the freezer and decided to use that to make my recipe, but any white fish would work well with this recipe.
Citrus Breaded Tilapia with Citrus Salad
Ingredients:
For Fish
3-4 Tilapia fillets
Juice of 1/2 lemon
Juice of 1 orange
1/3 cup bread crumbs
1 tsp of lemon and orange peel (total of 1 tsp)
1 tsp Greek Seasoning
salt
lemon pepper (or pepper)
1 tbsp oil
For Salad (I didn't measure anything for this salad)
Spring Mix Salad
Orange sections cut in bite size pieces
Grapefruit sections cut in bite size pieces
Onion
Red Wine Vinegar
Lemon Juice
Directions: Juice lemon and orange juice (I got close to 1/4 cup of the both juices). Place Tilapia in flat dish and pour juices over fish. Marinate for at least 1 hour. In small bowl combine bread crumbs, lemon and orange peel and Greek Seasoning. Season each fillet with salt and lemon pepper (or plain pepper). Dredge each piece of fish in bread crumb mixture Heat oil over medium high heat in frying pan, once hot place fish in pan and cook for 3-4 minutes each side (may need to be longer if fish is thick) or cook until fish is flaky. While fish is cooking make salad by combine Spring Mix Salad, orange and grapefruit section and onions. Drizzle red wine vinegar and lemon juice over salad.
