This month my cookie doesn't really follow the theme. If you have been following my facebook page you know that I was on vacation to see my hubby in South Dakota. I made the cookies at his apartment and he doesn't have lots to use for cookie making. I did take some ingredients and one cookie sheet but forgot my hand held beater so needed to go out and buy one. Saying that I needed to make cookies that were simple and with only a few ingredients.
Biscoff Chai Cookies
Ingredients:
1/2 cup unsalted butter, room temperature
1/2 cup biscoff spread
1/2 cup granulated sugar ( I used Zulka Morena Pure Cane Sugar)
1/2 cup brown sugar
1 egg
1 pkg Dove Chocolate Discover Spice Chai (about 1/8 cup of chai mix)
2 cups all purpose flour1/2 tsp salt
Hershey Kiss (I used Toffee Crunch), chocolate chips (optional)
extra sugar to roll cookies in
Directions:
Preheat oven 350 degrees.
In mixing bowl add butter and sugars and mix until creamy.
Add egg and beat until well mixed.
In small bowl, mix flour, spice chai and salt.
Mix dry ingredients into wet ingredients until well mixed.
If using chocolate chips, stir them into dough.
Roll cookies into one inch balls and roll into sugar and place on cookie sheet.
Bake for 10 -12 minutes until set.
If using Hershey kisses, unwrap and place one kiss on each cookie once you take them out of oven.
Let cool and enjoy.
Baker's note: I also made some place and once I rolled them into a ball, I used the bottom of a glass dipped in sugar to flatten them.
