The cupcakes taste wonderful and really don't need any frosting but I decided to frost them anyways with cream cheese frosting in gold (yellow), purple and green. My plan was to put all three colours in together but it just didn't work so decided to use the colours separately.
Beignet Cupcakes with Cream Cheese Frosting
Ingredients:
1 1/2 cup flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup milk (I used Almond milk)
1 egg
Directions:
In medium mixing bowl mix dry ingredients. In small bowl mix together milk and egg. Add wet ingredients to dry ingredients and mix well. Grease muffin tins or use paper liners. Fill liners or tin half full. Bake at 350 degree for 15-20 minutes until lightly brown. Let cool and frost.
Cream Cheese Frosting
Ingredients:
1/2 cup butter
8 oz cream cheese
2-3 cups powdered sugar
1 tsp vanilla
Directions:
In mixing bowl cream together butter and cream cheese. Beat in vanilla. Add powder sugar slowly until frosting is thick enough to use in cake decorator.
To make the colours - for green and yellow add a couple of drops of food colouring into the frosting to get the colour that you want. For purple - in small bowl add 10 drops red and 5 drops blue, stir together. Add frosting to food colouring and mix together.
