Fill the Cookie Jar with Granola Cookies

It is time to Fill the Cookie Jar and I think mine was empty for a long time... as when I asked hubby what I make his comment was ~~ "You make cookies".  His only suggestion was to make something that wasn't too sweet and I think I fulfilled his request.

Fill the Cookie Jar

This month's theme for Fill the Cookie Jar is Snowflake/Healthy/New Years.  We got a wide variety of themes to pick from... Well seeing that all I have to do is look out my window to see snowflakes and I have way too many, that theme was going to be out.  I was going to pick New Years and was even thinking that I should do something for Chinese New Years but nothing really jumped out at me when I was looking at recipes.  I still hope to make a Chinese New Years cookie and I still have time to do that.. So the next theme was healthy.  Well hubby wanted something that wasn't sweet so healthy it would be.  I also wanted to make some granola cookies so went on a search and found this recipe from White on Rice Couple through Yummly and Yummly these cookies are.

Granola Cookies

Ingredients:
1/2 cup diced  dried apricots and dried apples-  (I didn't have enough apricots so added the apples
1/2 cup pumpkin seeds
1/2 cup sliced almonds
3 oz dark chocolate broken in pieces (I used Lindt 90% dark chocolate)
3/4 cup white flour
1/2 cup whole wheat flour
1 tsp baking soda
1/2 tsp Kosher salt
1/2 tsp nutmeg
1/4 tsp cloves
1/2 cup butter
1/2 cup apple sauce
1 egg
3/4 cup Zulka Morena Pure Cane Sugar
1/2 cup honey powder
1 tsp vanilla

Directions:
Preheat oven to 350 degrees F
In bowl mix diced dried apricots, apples, and cranberries, pumpkin seed, almonds and broken pieces of chocolate.  Set aside.
In separate bowl mix flours, baking soda, salt, nutmeg and cloves and old fashion oats.  Set aside.
In mixing bowl, mix butter, sugar and honey.  Add apple sauce, egg and vanilla and mix well.
Stir in flour mixture until just mixed.  I did use my Kitchenaide to mix flour mixture with sugar mixture.
Stir in dried fruit/nut mixture.
Drop onto cookie sheet about 2 inches apart.
Bake for 14-16 minutes at 350 degrees.
Let cookies sit on pan for about 2 -3 minutes and then transfer to cooling rack to finish cooling.
Enjoy!




These cookies are delicious with a nice cold glass of milk.. Skim milk that is.  They also would be perfect for that breakfast on the run.  Next time I make them I think that I won't add the chocolate and maybe add just a pinch more of nutmeg or even some allspice.

  1. Marlys, I love these granola cookies! You used one of my favorite chocolates- Lindt 90%- and I know it must be good with the dried fruit, especially the apricots! I feel healthy just *looking* at your cookies! :)

  3. Hi Marlys, I'm so into healthy cookies lately. I love the granola and using dried fruits. This recipe sounds delicious, I think grampy will love this cookie.

    1. Thanks... I forgot that I even had pumpkin seeds until I was search for some nuts to put in them.. They tasted wonderful in these cookies.

  5. What a delicious recipe! I like that a lot of the sweetness comes from the dried fruit so you don't need to use as much sugar. Can't wait to try this one!
