Glazed Carrots and Cranberries

I am not one for cooked carrots, fresh ~~ yes but not cooked.  I finally found a recipe that I can use for cooked carrots and they are so good and taste so fresh.. not mushy.  This is a perfect recipe to eat with Cornish Hen with Apricot Glaze and Wild Rice Dressing.  It gives your plate that pop of colour.

4-5 carrots sliced
2 tbsp butter
1 1/2 tbsp honey
1/4 cup dried cranberries

In saucepan add 1 inch of water and bring to a boil.
Add carrots to boiling water and cook until soft approx 10 -15 minutes.  Drain and set aside.
In same saucepan, melt butter over medium heat.
Add honey and stir until dissolved.
Add cranberries and simmer over low heat for one minute.
Remove from heat and add carrots, stir until completely covered.

  2. these look great. I love adding cranberries to savory dishes to sweeten them up, but never thought of adding to carrots!

  3. Marlys, this dish is so beautiful- the colors are perfect for the Thanksgiving table. Honey, carrots, cranberries- simple and lovely. I enjoy carrots anyway, so I know this will be delicious. Thank you! :)
