Glazed Carrots and Cranberries

I am not one for cooked carrots, fresh ~~ yes but not cooked.  I finally found a recipe that I can use for cooked carrots and they are so good and taste so fresh.. not mushy.  This is a perfect recipe to eat with Cornish Hen with Apricot Glaze and Wild Rice Dressing.  It gives your plate that pop of colour.


Glazed Carrots and Cranberries

Glazed Carrots & Cranberries/ This and That #carrots, #cranberries, #thanksgiving, #Christmas, #sidedish

Ingredients:
4-5 carrots sliced
2 tbsp butter
1 1/2 tbsp honey
1/4 cup dried cranberries

Directions:
In saucepan add 1 inch of water and bring to a boil.  
Add carrots to boiling water and cook until soft approx 10 -15 minutes.  Drain and set aside.
In same saucepan, melt butter over medium heat.
Add honey and stir until dissolved.
Add cranberries and simmer over low heat for one minute.
Remove from heat and add carrots, stir until completely covered.
Enjoy.
