I love Rhubarb and then add Cream Cheese and you have a winner.  So when I saw Sheena from Hot Eats and Cool Read's recipe for Rhubarb Cream Cheese Blondie I feel in love.  This recipe looks so yummy and I will be making it as soon as possible.  I might even eat the whole pan myself.. Just don't tell anyone.

Grilled Veggie Pack

The first day of summer is just around the corner and with that comes BBQing.  Growing up, the BBQ was always heated every Sunday and we usually ate steak, porkchops or chicken with a baked potato, onions and carrots.  The first BBQ with potatoes and carrots from the garden were oh so good... I can just about taste them.  During those years we always wrapped our potatoes separately and also the onions and carrots were done in their own packages.  Now, I just make a pack and throw whatever vegetable I have in the house~ potatoes, carrots, beans, onions, cabbage, mushrooms, peppers.  I have done them with zucchini and summer squash but I find that those vegetables cook faster then the rest so they come out a bit mushy.  Now I do put those in a separate pack and grill them and then add to rest of the veggies.

I really don't have a recipe for these.  I place tinfoil on a hard service, enough to wrap all the veggies that I put on it.  Wash and cut up whatever vegetables that you have.. This one has carrots, mushrooms, onions, and peppers.   Sprinkle some seasoning salt and greek seasoning over vegetables.  Drizzle a small amount of Maggi Liquid Seasoning.  Cut up a few small pats of butter ~ I usually use about 1 -2 teaspoons of butter, depending on  many vegetables.  Wrap the tinfoil around the vegetables.  Place on your grill and cook until they are soft - turn package over frequently so that they won't burn.

This package has carrots, potatoes, beans, mushrooms and cabbage.

Grilled Corn on the Cob

I had really not ever eaten grilled corn on the cob.  My mom always boiled our corn and we ate it like that.  It wasn't until after I got married and my husband showed me how to grill it that I really enjoyed corn.  This is the best way to eat it or at least in my mind.  Even with corn that is dry and near its end of life, grilling corn this way is the best.  All you need it is a barbecue, tongs, water and some salt.  That is it... Not so hard is it?

I grill my corn last after my veggie packs and meat are done.  Husk corn. The coals should be white, turn down the heat some by closing the bottom vents.  Place corn on grill and BBQ, turning until corn is golden brown.   Just before you are ready to take it off the grill, dissolve salt (approx 2 tsp) in half a cup of water.  Brush salt water over corn, grilling for another minute or so.  Take off grill and Enjoy.  You could add butter if you would like but it tastes good just the way it is.

My Answers:
1.  Favorite Colour ~ I am not even sure that I have a favorite colour, but if I had to chose I would have to say yellow.


2.  Favorite Animal ~ This one was easy and required no thought.  My favorite animal is the elephant.  I am not sure why but it is and I even sat on a bus for 12 hours on a very bumpy road ( I had bruises on the back of my legs from hitting the seat) to see elephants in the natural surrounding in Ghana.  This picture was taken in Mole Park, Ghana and I was less then 50 yards away from it.

3.  Favorite Number ~  This question took a little more thought.  Again, I am not sure if I have a favorite number but if I had to pick one I would say 15... Why you ask, this is my anniversary day and the most important day of my life so far.

4.  Favorite Non-alcoholic Drink ~ Chai tea hands down.  I am drinking a cup as I write this.  Although I like many different teas, Chai is something that I drink every day if not a few times during the day.  Chai with a splash of French Vanilla cream, it can't get any better.

5.  Favorite Alcoholic Drink ~ I don't drink alcohol so this question I will have to pass.

6.  Facebook or Twitter  I am still learning twitter so I will have to go with Facebook.

 7.  My passions ~ The biggest passion in my life would be my Religion, followed by my husband and then cooking, photography and crafts.


8.   Giving or Receiving Gifts ~ I love giving gifts.  Don't get me wrong I love receiving gifts too, but I find more joy in giving them and watching the recipient as they open what I think is something that they will enjoy.

9.  Favorite City ~ I have traveled what I think has been quite a bit and would like to continue to travel.  I have many place that I enjoyed visiting. Each place has it own beauty.  I would have to say my favorite place is my home province of Saskatchewan and I miss it dearly.  I spent a lot of time living in Saskatoon and loved the bridges.  I do have some pictures of the city but none of the pictures aren't on disk.

10.  Favorite TV Shows ~ This is another one that I would have to pass as I have no favorite show.

Peanut Butter Chocolate Caramel Corn

Not so long  I was chatting with a co-worker about how peanut butter and chocolate goes so well together.  As we chatted we came up with this combination for a treat.  I came home and made and it was delicious, if I say so myself.  This recipe really doesn't have any measurements as I just put things together but hopefully you will get the idea.
I do have to tell you a story, as I was making this, I place the caramel bits in a cup to melt in the microwave. I had set it first for 30 seconds and it didn't even come close to melting them, they were still hard.  So I put them on again for 2 minutes ~ Thinking that I would check them about every 30 seconds.  I was busy pouring the melted chocolate and drizzling the the peanut butter spread over the popcorn and snitching a kernel or two to taste that I forgot about the caramels in the microwave....  I am sure that you can imagine what happened.  The next thing I knew was that the whole kitchen smelt like it was burning.  The caramel was  burnt to a crisp.  The moral of the story is that when you are melting something you should set the time for short intervals so you remember to check it often. 

Peanut butter Chocolate Caramel Corn 


Ingredients:
popcorn
chocolate (melted)
caramel bits (melted)
peanuts
peanut butter spread

Make 1 -2 cups popcorn and add a handful of peanuts, spread on cookie sheet.  Drizzle with melted chocolate, caramel and peanut butter spread.  Let sit until hardens and enjoy.



The peanut butter spread I used was Der Dutchman Peanut Butter Spread.

Fruit Infused Water

Do you have trouble getting all your water in?
I usually do very good at work, but at home it seems to be a hardship and I am not sure why...
So, I decided to get on the bandwagon of doing drink fruit infused waters.
They are simple to do and you can use any fruits or even vegetables to get the flavour you want.
Put in herbs...
Stick the container in the fridge for a few hours and
Voila you have......

Fruit Infused Water

The water is refreshing and much easier to drink when it has some flavour.  I have been using fruits that are starting to wilt and not as fresh and crisp as I like.  Instead of throwing them in the freezer, I throw them in a pitcher, fill with water and drink them.  I also have the benefit that my fridge likes to freeze things so they last longer.  I continue to add water until I think the fruit needs to be tossed out.  I add water for about 4 -5 days.  You might not use them that long.


My first try was with citrus fruits.  I cut up one lemon, one orange and 1/4 grapefruit and fill the pitcher with water.  My pitcher holds about a gallon.  The result refreshing tasting water. 



My second attempt was strawberry lemon.  My strawberries were starting to get spots on them and they were starting to get soft.  So I cut off the spots, threw them in my pitcher, added a lemon and a few sprigs of  thyme.  Let it sit in the fridge for a few hours and yum.. Some great tasting water.

You can use water ever fruit you want... peaches, pears, citrus, berries and some vegetables would be good like cucumbers.  Add herbs like mint, basil, thyme, rosemary and you won't find it so difficult to drink the water you need.  You can also eat the fruit if you would like, but I find that it doesn't have very much taste left after it has been sitting in water for a few days.
