Fill the Cookie Jar with Healthy Pumpkin Unbakes
I did have an idea for a cookie that I wanted to make but I ran out of time so those cookies will have to wait for another day.. As I was trying to figure out what I wanted to make I came across this recipe that I wrote down on a piece of paper. I am not sure where I found them so if they are yours let me know so that I can give you credit.
I love unbakes or no bakes as you may have heard them call. Growing up we always called this type of cookies unbakes. I am not sure if it is a Saskatchewan thing or just a Johnson thing but I will always call them unbakes.
Healthy Pumpkin Unbakes
Ingredients:
2 oz Ghirardelli semisweet or bittersweet chocolate* (approx 1/3 cup)
1 tbsp Tropical Tradition Coconut Oil
1 tbsp pumpkin
1/4 cup oatmeal
1/2 cup almonds (cut in small pieces)
1/4 cup California walnut (cut in small pieces)
1/8 tsp pumpkin spice
Directions:
Measure and add oatmeal, walnuts, and almonds in small bowl, set aside.
In small pot add chocolate, coconut oil, pumpkin, and pumpkin spice. Heat over medium heat until melted, stirring to prevent burning.
Pour chocolate pumpkin mixture over oatmeal and nuts and mix until well incorporated.
Drop on wax paper or baking mat covered cookie sheet and place in fridge until hardened.
Baker notes: I used 1 square of dark chocolate and the rest was semi-sweet chocolate mini chips. You also have leftover pumpkin... so wait and you will find out soon what to do with the rest.
