Potato Ham Breakfast Biscuit- Ultimate Recipe Challenge

I have joined another recipe challenge.  This one is BiMonthly and our first recipe challenge is POTATOES.  I think this is appropriate for this month being St Patrick's Day soon... Irish ~~~ potatoes~~Perfect except I am not a big potato fan.  My potatoes end up getting eyes and wither before I can even use them.  

So when I was trying to come up with something that would work for this challenge, my mind went to breakfast... one meal that I love to have potatoes with.  I also wanted something that I could take on the run.. or at least take to work in the morning and came up with this recipe...

Potato Ham Breakfast Biscuits
makes 16 biscuits


Potato Ham Breakfast Biscuit ~Ultimate Recipe Challenge -  Potatoes


Ingredients:
1 package Pilsbury Grand Biscuits
1 cup potatoes diced
1 tbsp butter
1/8 cup diced ham
4 eggs
2 tbsp milk
2 tbsp diced red peppers
3/4 tsp seasoning salt
1/2 tsp parsley
salt to taste
shredded cheese
1/8 -1/4 tsp shiraka sauce (optional)

Directions:
Preheat oven 375 degrees
Melt butter in frying pan over medium heat.
Add potatoes and salt to taste, fry until golden brown.
While potatoes are frying, split biscuits in half, using your fingers spread out each half and place into muffin tins, spreading up the side of tin.
Add fried potatoes into each of the 16 biscuit filled muffin tins.
Evenly sprinkle ham over fried potatoes.
In measuring cup (or any bowl that you can pour out of) add eggs, milk, diced peppers, seasoning salt, parsley and shiraka sauce (optional).  Whisk together.
Pour small amount of egg mixture into each biscuit.
Add a small amount of cheese on top.
Bake for 12 - 14 minutes until biscuits are golden brown and eggs are firm.
