Coconut Herb Mahi Mahi with Citrus Salsa

I  am so excited to be able to be part of Healthy Solutions Spice Blend Recipe Challenge.  Not only am I able to use some awesome spice blend but make an equally awesome recipe (at least I think it is awesome).  When deciding what to make, I wanted to do something healthy and even thought of using Tilapia which the spice blend that I picked is for but as I had Mahi-Mahi, I decided to  use that instead and glad that I did.

Coconut Herb Mahi-Mahi with Citrus Salad


I was given Healthy Solutions Spice Blends - Herb Crusted Tilapia to make this recipe.

Ingredients:
2 fillets Mahi-Mahi
1 tbsp coconut oil melted
1 tsp lemon juice
1/2- 1 tsp Herb Crusted Tilapia Healthy Solutions Spice Blends
1/2 grapefruit cut into bite size pieces
1 Halo Mandarin Orange cut into bite size pieces (any type of  orange would work)
1/4 cup pomegranate arils
1/4 cup cucumber diced
1/8 cup red onion diced
1 tsp red wine vinegar

Directions:
Melt coconut oil, add lemon juice.   Brush half of this mixture over both sides of the Mahi-Mahi
Sprinkle 1/2 to 1 tsp of the Spice Blend over both sides of the Mahi-Mahi.  Marinate for approximately 20 minutes (the coconut oil will solidify while marinating, so you will see a white film over the fish).
Add the rest of the coconut/lemon juice mixture with left over Spice Blend in your pan.  Heat pan over medium  heat.
Place Maui Maui in pan and cook for approx 3-4 minutes, turn fish over and cook for approx 3-4 more minute until fish is a nice golden brown colour on both sides.
While the fish is cooking, cut vegetables and fruit into a bowl.  Drizzle red wine vinegar over mixture and mix.
Serve Mahi-Mahi warm with salsa.




I ate mine with baked yams that I made by adding small amount of coconut oil and the Spice Blend and baked at 350 degrees for about 30 minutes.  A perfect healthy and simple meal to make.

  13. That looks scrumptious. Mahi Mahi was one of the first fishes I learned to eat and enjoy. I had such an aversion to it for a long time. YUM.
