Gingerbread Eggnog Latte Cookies ~ Fill the Cookie Jar

As I was trying to figure out what type of cookie I should make this month to Fill the Cookie Jar with I had found a cookie that was in a shape of a cup.  It was made with premade cookie dough and used chocolate as the latte and a pretzel as the handle.  And that is how this cookie began......

With it beginning Christmas and wanting to make a cup cookie, my mind went to gingerbread and eggnog.  These cookies didn't turn out like a cup the way I wanted, they are a work in progress.

Gingerbread Eggnog Latte Cookies 
Ingredients:
6 tsp butter
3/4 cup brown sugar
1 egg
1/2 cup molasses (I used corn syrup and maple syrup 3:1)
2 tsp vanilla
1 tsp finely grated lemon zest
3 cups flour
1 1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
2 tsp gingerbread spice (this is the recipe that I used to make the gingerbread spice)
optional- Gingerbread Spice M&M

Icing: 
1/8 cup butter
1 cup powder sugar
1 tsp gingerbread syrup (I use Torani)
1 tbsp eggnog


Directions:
Combine dry ingredients into a medium bowl
Beat butter, brown sugar and egg until well blended.  
Add molasses, vanilla and lemon juice and mix well.
Slowly mix in dry ingredients.
Divide dough into two parts.  Wrap each portion in plastic wrap and let sit on countertop for at least 2 hours (dough can be placed in fridge at this point to be used at later time - just bring dough to room temperature before using).
To make cups:
Roll dough into 1 inch balls and place each ball into small muffin tins, sprayed with cooking spray. Make a dent into the middle of the ball with your finger, pushing the sides up the side of the tins.

 

Bake for 10-12 minutes at 350 degrees.  I do take them out about half way and redent the balls.  Let cool.
To make icing:
Place butter in mixing bowl and beat until fluffy.
Add powder sugar slowly.
Add gingerbread syrup and eggnog until icing is desired consistency, add more eggnog if needed.

Using star tip, add icing into frosting bag and ice cookies.  (You can also use a plastic bag and cut out tip).  Cut M&M in half (The previous owners of the house left a pill cutter... this works great for cutting small things like M&M)  Glue one side of the M&M to the cup with with the icing.  Crush a couple of M&M (or use the ones that didn't break in half properly) and sprinkle over the icing.

Baker's Note:  I only made half the recipe for these cups.  My plans are to use the rest for another type of cookie later.
