Lemon Basil Focaccio - #CIC

I am cutting this month's challenge to the last minute. I am not sure where the month went, before I knew it the 20th was just around the corner.  Our challenge this month is Basil and Lemon and as I had both, I thought I can do this.



Crazy Ingredient Challenge - Lemon Basil Focaccio

I have wanted to make focaccio for a long time and when I was thinking of something to make, I thought this would be a perfect time to make a focaccio.  As I have never made one I had to find a recipe to go by.  I adapted my recipe from Food.com.  I was talking to my hubby on the phone as I made mine and forgot to use my knuckles to make indentations and prick the bread with a fork.  Can I blame my hubby about this or just blame my forgetfulness? 

Lemon Basil Focaccia - Crazy Ingredient Challenge / This and That #CIC

Ingredients:
1 pkg yeast (I use Red Star Yeast)
1 cup warm water (105-110 degrees Fahrenheit)
1/2 tsp sugar
2 3/4 cup flour
1 tsp salt
1 tsp sugar
1 tsp basil paste
1/2 tsp lemon pepper
1/2 tbsp lemon juice
1 tsp garlic powder
1 tbsp vegetable oil
2 tbsp olive oil
2 tbsp parmesan cheese
1 cup mozzarella cheese
tomato halves (optional) - I just used mini tomatoes

Directions:
Mix yeast, warm water and 1/2 tsp sugar in small bowl.  Let yeast proof for 10 minutes until yeast is bubbly.
In large bowl, stir together flour, salt, 1 tsp sugar, lemon pepper, garlic powder.
Add yeast mixture, basil paste, vegetable oil and lemon juice into flour mixture.
Blend together until well mixed and kneed until dough is smooth and elastic. (I used my dough hook on my kitchenaide for this process and it worked well).
Lightly oil bowl and place dough inside, turning the dough so that it is covered with some oil.  Cover dough with a damp towel and let rise for 25 minutes.
Preheat oven to 425 degrees.
Punch down dough and place dough onto greased baking sheet or baking mat onto baking sheet. Spread dough out into 1/2 inch thick rectangle.
Use knuckles and make indentations about 1/2 inch apart and then prick dough with fork (I forgot to do this part).
Spread olive oil over top of bread.
Mix parmesan and mozzarella cheese and spread over bread.
Cut up tomato into halves and place on top of bread (optional)
Place in oven and bake at 425 degrees for 13 - 15 minutes until bread is golden brown.
