Oven Cherry Jalapeno BBQ Chicken with Cherry Salsa

I am so excited to tell you about a new company that I have had the opportunity to learn about.  The company is called Gourmet Warehouse and I was given products to try and review.  First before I get into the products and what I have made with them, I have to thank a good friend of mine, Cynthia from Feeding Big  for letting me know about this company.

The Gourmet Warehouse is based out of Hilton Head, SC and have 20 years of bringing wonderful hand crafted product.  They produce and sell BBQ sauces, marinades, injectables marinade and spice rubs.  I had a hard time trying to figure out what products that I wanted to try and decided that I would try a rub, BBQ sauce and the injectable marinade.



I decided to use the Cherry Jalapeno BBQ Sauce first.  The reason that I picked it was that it sounded so good... A little tartness with a little kick and that is is exactly what it gives.  I also had found some local cherries when I was shopping and decided to make a salsa to go with the BBQ chicken and it tasted wonderful.  The chicken was moist, tart and had a bit of kick to it, perfect by itself and when eaten with the cherry salsa, an explosion of flavours in your mouth.

Oven Cherry Jalapeno BBQ Chicken with Cherry Salsa


Ingredients:  Printable Recipe
2 lbs chicken (I used wing pieces)
1 egg
flour (I used approx 1/3 cup)
1 -2 tbsp oil (I used Pompeian Mediterranean Blend)
1/2 bottle Gourmet Warehouse Cherry Jalapeno BBQ Sauce
1 cup cherries, pitted and halved
1/8 cup red onion
1/8 cup fresh basil, washed and torn in small pieces
1 tbsp Red Wine Vinegar (I use Pompeian)

Directions:
Preheat oven to 350 degrees F.
Place egg in bowl and beat well.  I put the flour in a large ziploc bag.  Dredge the chicken through the egg and place in ziploc bag.  Shake bag so that flour coats all the chicken pieces.  
In large frying pan or dutch oven heat oil over medium high heat.  Place chicken into pan and cook until all sides are golden brown.
Once chicken is brown, place in baking pan. (I use a 9X9 pan).  Pour Gourmet Warehouse Cherry Jalapeno BBQ Sauce over chicken.  Place in oven and bake for 1 hour, basting chicken every 15 minutes until done.   I just turn the chicken from side to side in the sauce every 15 minutes.
While chicken is baking in small bowl, pit and half or quater cherries, add onions, basil, red wine vinegar, salt and pepper.  Stir well and place in fridge until ready to use.
Serve chicken with salsa.



I served the chicken and salsa with sweet potato chips.
I will be using the injectable marinade for my next creations.  I hope you come back and see what I did.
