Fill the Cookie Jar with PB & J Sandwich Cookies

Remind me again why I would think making rolled cookies where such a good idea?  I hate making rolled cookies, I am not good at doing them, I don't have the patience to make them... Ok, so that is the reason I don't make them... I asked remind me why I thought it was a good idea?
The reason?  Why it is Fill the Cookie Jar time again.  This month's theme is Back to School.  When I thought back to my school days there were so many cookies that my mom would have ready for our after school lunches.  That was one of my favorite things to come home from school and have fresh cookies, right out of the oven on the counter waiting for us to devour them.

As I was trying to figure out what to make for this month's theme, peanut butter and jam kept jumping out at me.  So I knew that those two ingredients had to be in my cookie.  I had already made Thimble Cookies, so couldn't do that.  I even thought of making cookies and spreading peanut butter and jelly between the cookies but thought that might be a mess to make.  I did have a Linzer Cookie Cutter that I wanted to try out and that is where my recipe came from.  The recipe on the insert of the cookie cutter with a small change.

PB & J Sandwich Cookies

adapted from the recipe of the box of the Wilton Linzer Cookie Cutter

Ingredients:  Printable Recipe
2 cups flour
1/3 cup PB2
1/4 tsp cinnamon
1 cup softened butter
1/3 cup sugar (I used Zulka Morena Pure Cane Sugar)
1 egg
1/4 tsp Vanilla
1/2 cup Seedless Raspberry Jam (or Jam of your choice)
Powdered Sugar(optional)

Directions:
In a medium bowl combine flour, PB2 and cinnamon, set aside.
In mixing bowl, mix butter and sugar until light and fluffy.
Add egg and vanilla and mix well.
Mix in flour mixture just until all flour is incorporated.
Divide dough into two sections and make each section into a sphere and place in fridge for at least 2 hours or until firm enough to roll.
Once dough firm, preheat oven to 350.
Sprinkle small amount of flour on surface that you are going to roll cookies on.
Roll out cookies to approx 1/4 inch thick.
Using cookie cutter or linzer cookie cutter, cut out shapes (see below).  You will need two cookies for each sandwich. 
Place cookies on cookie sheet and bake for 10-12 minutes until lightly brown.
Let cool for 2 minutes.
Apply jam on bottom cookie and another cookie on top.
Sprinkle powdered sugar over top of cookie.

Baker's note:  I am not very smart when it comes to using the linzer cookie cutter and used it separate.  I cut out the cookies and then used the insert to cut out the star in half of the cookies. You don't have to use the linzer cookie cutter.  If wanting an insert cut out of the top cookie, just use a smaller cookie cutter to get your design.

  4. Marlys, I hate to roll out cookies also, but often find myself doing it anyway! I have a Linzer cookie cutter and threw it on the floor the first time I used it! Your cookies look so good that I think I will have to dig my cookie cutter out and try it again. Thanks for sharing this great recipe at the Fill The Cookie Jar group!

  7. These are such a pretty cookie, you did fabulous! I can only I have to say that my patience level would be an issue for me on pulling off this cookie. I do wish I could bite into to one though :)

  8. You make the most beautiful cookies and I'm sure they taste just as good. I'm not paitent enough to do all the rolling, cutting and baking. I like to drop, bake and eat. LOL
