Quinoa Salad and Sunbutter Dressing
Salad for One:
1/2 cup cooked quinoa
2/3 cups vegetables and fruit ~ I used Romaine lettuce (torn in small pieces), mini peppers, red onions and blueberries
Sunberry Dressing to taste (I used about a tbsp)
Sunflower Seeds or Pumpkin seeds
Sunbutter Dressing: makes 2/3 cups
3 tbsp Sunbutter
1 tbsp olive oil ( I used Pompeian Extra Light Tasting Olive Oil)
2 tbsp orange juice
3 tbsp water
1 tbsp dijon mustard
1/2 tbsp honey
1 small garlic clove
1/2 tsp salt
Directions:
To make dressing, add all ingredients into food processor and mix until no lumps.
For salad mix quinoa, vegetables and blueberries, add dressing to taste. Mix well.
Serve on a bed of Romaine Lettuce.
Garnish with either sunflower seeds (I was out) or I used pumpkin seeds.
Cook's Notes: I will be adding more dressing when I make this salad the next time. It was so delicious but 2 tsp is just not enough to get the full flavour of the dressing.
Quinoa has become my replacement for rice and potatoes and always looking for new recipes. I love your Sunbutter Dressing for the salad, it sound delicious and I like the addition of blueberries too.
