A short time ago I found a new tea company called Calmer Sutra Tea through twitter and sent them a tweet that I am a big tea drinker. I quickly got a reply asking me if I would like to try their teas and in their package they sent me was a jar of Ginger Infused Honey.

Anyone reading my blog knows that I use a lot of ginger in my cooking and I always have ginger root at home so this ginger honey was very intriguing. It tasted wonderful, the honey has bits of fresh ginger in it, sweet with a little bit of kick... In my tea or just by the spoonful it was wonderful (more on the teas to following in a later post) but I found that it was just as wonderful using in cooking. As it was Easter I was planning on making ham and decided some fresh apple sauce would go good with it. I add some Ginger Honey to the apple sauce and it was perfect, giving it just that little bite that it needed.
Ginger Honey Apple Sauce
2 apples
1/2 cup Orange Juice
1 tbsp Calmer Sutra Tea Ginger Infused Honey
1/2 tsp allspice
Directions:
Peel and cut up apples.
Add apples, orange juice, Ginger honey and allspice in small saucepan. Bring to boil and turn down to simmer and simmer for approx 30 minutes until apples are soft, stirring occasionally .
Let cool. Once cool mash with potato masher or food processor to the consistency you desire.
This applesauce went perfectly with our Easter Ham. I also added the Ginger Honey to the Glaze I made for the ham (recipe to come soon).
