Crazy Ingredient Challenge ~ Broccoli and Pumpkin #crazyingredientchallenge


Chicken and Broccoli Pizza has to be my favorite type of pizza so when we got our ingredients for our Crazy Ingredient Challenge ~ Broccoli and Pizza, I just knew what I had to make.  Pizza!  I did some searching and found that I could just put the pumpkin puree into my pizza crust and that is what I did.  The verdict... YUM!  I decided to use turkey instead of chicken as I had some on hand... but it would be perfect with chicken too.


I am sure you are wondering what this Crazy Ingredient Challenge is all about.   At the beginning of each month we are given two ingredients by Jutta of Hungry Little Girl.  On the 20th of the month we then have reveal day and post the recipe that we come up with.

Turkey and Broccoli Pizza on a Pumpkin Crust

Ingredients:
Pizza Crust:
2 1/2 cup flour ( I used 1 1/4 white flour and 1 1/4 whole wheat flour)
3 tsp baking powder
1 tsp salt
1 tbsp olive oil ( I used Pompeian Extra Virgin Oil)
3/4 - 1 cup warm water
1/2 cup pumpkin puree
extra olive oil
Pizza:
2/3 cup Alfredo Sauce either homemade or bought
approx 2 cups diced turkey ( you could also use chicken)
approx 2 cups broccoli cut in small pieces
2 cups of Mozzarella Cheese
small amount of fiesta cheese (optional)
crushed red pepper to taste (optional)

Directions:
To make pizza crust:
In moderate bowl, mix flour, baking powder, salt.  Add pumpkin puree, olive oil and 3/4 cup flour.  Mix until it forms into a ball.  If stiff add more water.  Knead on flour board for 3 -4 minutes.  Cut dough into 5-6 even size pieces for individual sizes.  Smooth dough out to about 5-6 inch rounds.  Place on cookie sheet. Brush on small amount of olive oil onto top of each pizza crust.  Bake in 400 degree oven for 10 minutes.
To assemble pizza:
While crust is baking, cut broccoli and turkey in small pieces.  Take crust out of oven.  Spread approximately 2 tbsp of Alfredo sauce onto each crust.  Add chicken and broccoli on top of sauce.  Add approximately 1/3 cup Mozzarella cheese onto of turkey and broccoli.  Add a small amount of Fiesta Cheese and crushed pepper (optional).    Place back in oven for 15 minutes.
