Zucchini Bread with Chocolate and Crystallized Ginger

National Zucchini Bread Day

Today is National Zucchini Bread Day. I love baking with zucchini, breads seem to be so much moister when I use it. In the fall I always freeze zucchini in one cup amounts to be able to use throughout the rest of the year. When I thaw it out, I do remove some of the liquid as freezing it does bring more liquid.

It is Thursday again and the week's are just flying by.. But for me the next couple of days can come quickly as on Saturday morning I am flying to Florida to spend time at South Seas Resort with a couple of girl friends.. Almost Wordless Wednesday

This morning we woke up to snow... What a way to start our Anniversary. 8 years ago today I got married in Togo, West Africa and the weather was quit different ~ way too warm and no thoughts of snow in the forecast. I wasn't too impressed to see the new snow on the ground but at least so far it is only a dusting but the sky was magnificent. It was a bluish - purple colour and even though it was snowing the sun was big and bright in the sky.

These pictures don't do it justice... but I loved how the sun was coming through the tree branches.
