Spicy Porkchops with Pear Salsa

Spicy Porkchops with Pear Salsa

This month's crazy ingredient challenge is pears and red pepper flakes.  Salsa came to mind when I thought of the ingredients together and it was perfect ~ fresh fruits and vegetables with a touch of spicy.  It went perfect with the porkchops and then we added the leftover salsa to our salad - YUM!

Ingredients:
Porkchops-
1 pound porkchops
1/2 tsp red pepper flakes
1 tsp ginger
1/2 tsp dracula nightmare
salt and pepper to taste
1 tbsp oil

Salsa-
1/3 cup peppers chopped
1 1/2 tbsp green onions chopped
1 -1/2 pear chopped *
1/2 tsp red pepper flakes

Directions:
Mix together, red pepper flakes, ginger and dracula's nightmare; crush slightly.
Place porkchops in dish and sprinkle with salt and pepper to taste.
Sprinkle the spices over each side of the porkchops
Drizzle with oil
Let marinate for at least 30 minutes.

Preheat oven to 400 degrees with ovensafe pan in the oven (I use my cast iron pan)
Using oven mitts, take out pan when hot
Place pan on med-high heat and place porkchops in pan and cook for 3 minutes
Flip porkchop over and place in oven and cook at 400 degrees for 10 minutes (internal temperature of 140-145 degrees)

While porkchops are cooking, in bowl miss salsa ingredients together and let sit. (this could be made early if needed).

Serve porkchops with salsa.

Cook's note:  I couldn't find fresh pears so I used canned pears that was in a light syrup.  If using fresh pears you might want to add a small amount of sugar, honey or even maple syrup.

I do have to apologize for my pictures as the light wasn't good and we were hungry so took them quickly in the wrong light.  A good excuse to make this dish again.

  1. Great recipe Marlys. What is Dracula Nightmare? I googled it but nothing popped up that would be used for cooking.
