Lime Tea Chicken - Crazy Ingredient Challenge

A delicious moist chicken recipe   marinated in black tea and lime juice made for our Crazy Ingredient Challenge.

A delicious chicken recipe marinated in black tea and lime juice

This month's ingredients for our Crazy Ingredient Challenge is Lime and Black Tea.  I love doing these challenges and trying to think outside the box.  So this month I decided to really think outside the box and make a savory dish with these two ingredients.

I marinated the chicken in the tea and it was so good.... Moist and tender and delicious.  I had some cold brewed tea in the fridge that I used.

Ingredients:
4-6 chicken breasts
3/4 - 1 cup black tea *
Juice of 2 limes (approx 1 1/2 tbsp)
Lime Zest (approx 1 tsp)
1 tsp basil
1 tsp rosemary
1 tbsp oil

Directions:
Cut or pound your chicken so that all pieces are approximately the same size.
Brew black tea -  have cold brewed tea in my fridge (recipe below)
To tea add  lime juice, lime zest, basil, and rosemary.
Place chicken in tea mixture and place in fridge for 1 - 4 hours to marinate.
In  frying pan, heat oil on medium high heat.
Place Chicken in oil and cook until chicken is golden brown and cooked through (approx 4 minutes per side).
I did add a small amount of the marinade over the chicken as I was cooking it.


Cooks Notes:  I made cold brewed tea by placing 3 -4 tea bags in 4 cups of cold filtered water and let sit for 1 - 8 hours.   I usually brew it overnight.  Keep in fridge and use as needed.  Tastes great in an iced tea.

This recipe was enjoyed the first night warm with zucchini and carrot noodles drizzled with balsamic reduction and then I have been enjoying the chicken with my salad... even better days later.

    1. The tea taste is a subtle taste but still there. I think because I used a cold brew method for my tea you can taste it more than if you use a hot brewed method

    1. Yes I think it would work with many different types of tea... even some herbal teas would be great.
