Salted Caramel Brownie Cookies - Fill the Cookie Jar

An irresistible cookie that tastes like a brownie... slightly crunchy on the outside with a soft and gooey center that melts in your mouth.

Salted Caramel Brownie Cookies

What do you think of when you think of Valentines?  Love and chocolate comes to my mind and who doesn't love chocolate....  I know, I know there will probably be someone that may read this and think chocolate isn't something that I love.  I believe that chocolate can help anything and every woman needs to have some chocolate in their life... ok, ok... men and children need chocolate too.  Although if you are a woman making these awesome cookies then you may want to hide all evidence of these so that you can have every morsel yourself -  these are not meant to share.

This month's theme for Fill the Cookie Jar is Valentines or anything that makes you think of February.  When thinking of what I wanted to make this month, my mind went to brownies and I knew I needed to make brownie cookies.  I went online and did a search and found Brownie Cookies made by The Pioneer Women.

Along with chocolate, my mind also went to Salted Caramel and as I had some Salted Caramel Syrup I decided to add some to the batter... Best decision EVER!

Ingredients: 
2 ounces Baking Chocolate (I used Ghirardelli 60% bittersweet chocolate baking bar)
1 cup softened butter
2 cups sugar (I used Zulka Morena Pure Cane Sugar)
3 eggs
2 tablespoon Salted Caramel Syrup
2 1/4 cup flour
1/4 cup cocoa powder (I used Divine Chocolate Cocoa)
1 tsp baking powder
1/2 tsp salt
optional: powder sugar, icing, sprinkles and/or candies

Directions:
Preheat oven to 350 degrees.
In small bowl melt baking chocolate and let cool.
In mixing bowl add butter and sugar and beat until creamy.
Once chocolate is cool continue mixing butter and sugar mixture and slowly add chocolate and mix until well blended, scrape sides of bowl to make sure it is all mixed.
Add each egg separately and mix, scraping the sides of the bowl.
Add salted caramel syrup and mix in.
Combine flour, cocoa, baking powder and salt together.
Add dry mixture slowly and with mixer on low setting, blend together.  Scrape sides so that everything is blended together.

Drop a large tablespoon of dough onto cookie sheet that is covered with baking mat or parchment paper.
Bake at 350 degrees for 10-12 minutes.  (cookies will puff up and set when done)
Take out of oven and let sit on cookie sheet for one minute.
Move cookies onto cooling rake and let cool completely.

These cookies are good just like the come out of the oven.  Sprinkle powder sugar or ice cookies is optional.  I did decorate some of mine with sprinkles for Valentines.

These cookies as they bake will puff up and then as they cool they will settle and get a crinkly texture to the top.

  3. O.K., I'm in for this delicious, choclately, brownielike Valentine's Day Cookie. I love everything about it. I can't wait to give it a try, but first I have to finish the two different cookies I've made this week, then I'm on it.
