Gingerbread Snowman Cookies #fillthecookiejar

Too cold to go outside to make snowmen, you can still make them in your cozy warm kitchen.  Make them with gingerbread and chocolate... and enjoy as many you want with a cup of coffee, tea or hot chocolate ~ your choice!

Gingerbread Snowman Cookies

Make snowman in the warmth of your kitchen with gingerbread and white chocolate

I saw a picture of these cookies in All You magazine while standing in line waiting to pay for my purchases.   I thought they would be perfect for this month's Fill the Cookie Jar recipe.  My mind immediately went to making a gingerbread cookie recipe.  Using gingerbread and snowman would bring Christmas and Winter together.  I did end up buying the magazine and they used a chocolate recipe... which would have been good also.

We had snow this week and it was perfect snowman making snow.  That means that I could make snowmen outside and inside... Although I just made a small one as I think my neighbours might think I went crazy, an old lady making a snowman by herself.

Maybe I am not so good at making snowman, outside or inside...

The recipe I used to make the gingerbread is from a church cookbook and called Finnish Gingersnaps. This recipe is easy to make and work with as long as it is chilled when you roll it out.  

Ingredients:
1/2 cup molasses
1/2 cup brown sugar
1/2 cup butter, softened
1/2 cup heavy cream
1 tablespoon ginger
1 tablespoon cinnamon
3 to 3 1/2 cup flour
1 tsp baking powder
1/2 tsp salt
white chocolate (1 used about 1/2 bag of Wilton white chips)
dark chocolate
Sprinkles

Directions:
Beat molasses, brown sugar and butter until smooth.  
Add heavy cream and mix.
Add ginger, cinnamon, flour, baking powder and salt, continue to mix until dough is stiff. (I used all 3 1/2 cups of flour).
Chill for several hours (I chilled mine for 1 and half hours).
Preheat oven to 375 degrees.
Roll out small batches of dough into 1/4 inch thickness and cut into three different size rounds.
I used 3 different sizes of glass containers to make my rounds.
Bake for 7-8 minutes at 375 degrees.



To make snowmen:
Melt white chocolate on double boiler (I place a glass bowl in a pot - putting water into pot just to the bottom of the bowl and heat on the stove).
Cover each shape with chocolate and layer from biggest to smallest, lining up one side.
To make face, I melted a small amount of chocolate and place in small sandwich bag, cutting tip so there is small hole and using it to make eyes and mouth.  Use sprinkle for nose and buttons.

Baker's note:  I only made 1/2 of the recipe- making 9 snowmen and one snowman using 3 small circle rounds.

  1. Such cute snowmen cookies! I love that you made them gingerbread. Your real snowman is perfect, I want to make one now lol pretzel sticks for his arms and lets see what else :)

  3. These are so cute! I love that you stacked them up. The dimension is so great. I had to chuckle when you talked about your neighbors thinking you are a crazy woman. I also chuckled at your mini snowman - he is too cute!

  5. There are good and bad with living in the boonies like I do. The good part is, my neighbors can't see when I do things that might appear strange :) LOVE your cookies. They are so fun! If we end up doing any entertaining at home, I would love to serve these!
