Lemon Brownies Bites

Bite size morsels of chocolate with a hint of lemon,covered with a lemony butter frosting that is drizzled with chocolate makes these brownies awesome.

Lemon Brownie Bites



I found this recipe over at Ghiradelli Website and thought they would be perfect to make for a gathering I was going to.  I love that they are bite size as they are perfect for after a meal or with coffee.  I decided only to drizzle a little of chocolate on top instead of making the glaze.

Ingredients:
For Brownies
1/2 cup Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
1/4 cup unsalted butter
1/3 cup sugar (I used Zulka Morena Pure Cane Sugar)
1 large egg
1 tsp vanilla extract
1/2 cup flour
1/2 tsp finely shredded lemon zest
1/4 tsp baking powder

For Lemon Frosting
2 tbsp unsalted butter, softened
1/4 tsp finely shredded lemon zest
1 1/3 cup powdered sugar
4 tsp lemon juice divided or as needed

For chocolate drizzle
1/8 cup Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips melted

Directions:
Preheat oven to 350 degrees F
Line 20-24 mini muffin cups with mini paper bake cups.
In medium saucepan, add baking chips and 1/4 cup butter, heat and stir over low heat until melted and smooth.
Remove from heat and stir in sugar.
Add egg and mix with wooden spoon until combined.
Stir in vanilla.
In small bowl, stir together flour, 1/2 tsp lemon zest and baking powder.
Stir flour mixture into chocolate mixture until well combined.
Drop one teaspoon of mixture into each baking cup.
Bake at 350 degrees for 9-11 minutes until wooden spoon comes out clean.
Cool in tin for 5 minutes and then remove and cool completely. 

In a small bowl beat 2 tbsp softened butter and 1/4 tsp lemon zest on medium speed for 30 seconds. Add powdered sugar and 2 tsp lemon juice.  Beat until well combined.  Continue to add lemon juice, 1 tsp at time until frosting is thick.  Using a pastry bag fitted with star tip, add frosting in bag and pipe frosting onto each brownie.

Melt 1/8 cup baking chips in pastry bag with pencil tip or small self sealing plastic bag with tip cut. Drizzle chocolate over frosting.
