Pineapple Rosemary Syrup - #CIC

It is the 20th of the month and time for Crazy Ingredient Challenge.  This month's ingredients didn't seem to crazy to me and ingredients that I use often, although not together.  So, what ingredients are they you ask --- Pineapple and Rosemary.

Pineapple Rosemary Syrup

When I first found out that pineapple and rosemary where the ingredients that were voted on for this month, I thought of making a chicken recipe.  My thoughts went to a rosemary chicken with grilled pineapple.  But as you see I didn't make that but it still is in the books sometime down the road. 


So, what made me pick a syrup.  Well, I love making simple syrups and I love to use them in my coffees and tea.  As I was coming up with a recipe I thought wouldn't these two ingredients taste so good in a white or green tea.  I made the syrup and added to a green iced tea -- A perfect drink for the summer, so refreshing with a yummy sweetness and an undertone of rosemary, a wonderful combination.

Add 1 tbsp or more to taste  Pineapple Rosemary Syrup to cold green tea.  Add ice and enjoy. 

Ingredients:
2 tbsp lemon juice
2 sprigs rosemary (you can add more if you would like a bolder taste)
2/3 cup sugar (I used Zulka Morena Pure Cane Sugar)
Zest of the lemon
1 1/2 cup water
6 oz pineapple juice

Directions:
Combine sugar, water, lemon zest, lemon juice in a small sauce pan.
Bring to a boil.
Stir in pineapple juice and rosemary.
Reduce heat to medium and continue to boil until the syrup reduces about 1/2.
Take off heat and cool.
Strain and pour into container.  Refrigerate.

Along with the tea, this syrup tastes so good with fresh fruit.  Drizzle some on a bowl of fresh fruit and you feel that you are in heaven.  The fruit that I made was very juice and when slurping up the juice with the syrup it was so good.... and I found another way to use this wonderful Pineapple Rosemary Syrup... I am going to make a yummy fruit drink with it too... I can't wait.

I also drizzled some syrup over my waffles and strawberries.  This was also very tasty but as the syrup needs to be a little thicker to be perfect for waffles.  To make it thicker, just add a small amount of extra sugar and boil longer...

  5. Looks great. Besides the tea and over waffles you already mentioned, I think it would go nicely drizzled over a vanilla cake instead of icing.
