Even with the extra salt I thought these cookies tasted awesome... A little sweet with the Chocolate Hearts and a little salty with the extra salt.. and melt in your mouth goodness. I do have to tell you a small little secret ~ but don't tell my Beachbody coach ~ I ate 4 of these delicious morsels of cherry chocolate melt in your mouth shortbread cookies.... See if you can only eat one.
Ingredients:
1 cup butter softened
1 cup powdered sugar (confectionery sugar)
1/2 tsp salt
2 tsp maraschino cherry juice
1/2 tsp anise extract (original recipe called for almond)
2 1/4 cup flour
1/2 cup chopped maraschino cherry
Chocolate Hearts/Kisses or Hugs
Direction:
Preheat oven to 350 degrees F
In mixing bowl, beat butter, powdered sugar and salt until well blended and fluffy.
Add cherry juice and anise extract and mix well.
Gradually beat in flour until well mixed.
Stir in chopped maraschino cherries.
Roll dough into 1 inch balls and place on cookie sheet ( I cover my cookie sheet with a baking mat).
Bake for 8 -10 minutes until bottoms are slightly brown at 350 degrees F.
Once cookies are removed, press one heart/kiss or hug into each cookie.
Let cool and enjoy.

I am with you on watching the weight and when you're a baker it's a challenge. Shortbread cookies are one of my favorites and the chocolate heart for garnish really set these off!
ReplyDeleteI have seen these around, but not with the cherries in them, which in my opinion would make them completely AWESOME! And I enjoy salty sweet, so I am sure accidentally doubling the salt wouldn't have been a problem for me.
ReplyDeleteI've also made some crazy adjustments in some of my recipes when I try to halve them. You are not alone, but I can imagine this cookie tasting delicious with the salty and sweet. I'm a fan of shortbread cookies - I shouldn't say that - I'm a fan of ALL cookies though I do enjoy shortbread for it's versatility. Pinned/sharing.
