Valentine's Mocktail ~ Orange Pomegranate Mocktail

It is time is time to start thinking about what you are going to make for your special Valentine's meal. Do you have a plan of what you are going to make?  Do you make a special meal for your loved ones?  I have made you a Mocktaill that would be perfect for you and this can be even shared with your children..  gv

Valentine's Mocktail ~ Orange Pomegranate Mocktail/ This and That #Valentines2015






This recipe makes 4-6 drinks depending on what kind of glass that you use.

Ingredients:

1/2 cup orange juice

1/2 cup pomegranate juice
1/4 cup cranberry juice
1/4 cup lemon juice (I used the juice of 1 Meyer Lemon)
1/2 cup sugar (I used Zulka Morena Pure Cane Sugar)
2 star anise
Lemon Lime Soda

Directions:
In small sauce pan combine juices, sugar and star anise.  Over medium heat bring juices to a boil and boil for one minute, stirring occasionally until sugar is completely melted.  
Remove from heat and let sit for 30 minutes. Strain.
To serve, fill glass with 4-5 tbsp juice  mixture and top up with Lemon Lime Soda.  Add pomegranate arils (optional) for garnish.

This juice tasted good by itself and the next time I make it I am going to decrease the sugar as it tasted sweet to me.  I loved the flavour that Star Anise gives to the juices.   h 

 
Note:  I placed the syrup in the fridge for a couple of days.. The intensity of the Star Anise increased (YUM) and found that you could even use less of the syrup per glass and still have a great drink.
