Cookbook Club Review ~The Pioneer Woman Cooks- A Year of Holidays

I have joined a group of great bloggers that review cookbooks each month.  This month we are reviewing Pioneer Woman Cooks- A Year of Holidays.  I am sure I am the only person that has never even looked at one of her recipes. Of course I know who she is but I have never really looked at any of her recipes.

Cookbook Club Review ~ The Pioneer Woman Cooks- A Year of Holidays




For these reviews, we are to make two of the recipes in the cookbook.  Well I picked four and as these recipes went together I decided to write about all four of the recipes.  Another great part of these reviews is that we are giving away one cookbook to you...  So you get a chance to have this cookbook isn't that wonderful.


Black Eyed Pea Salsa and Salted Pita Wedges
I love black eyed peas, we have them often, so when I saw this recipe I knew that I had to make it.  I cooked my black eyed peas instead of using canned but otherwise I made the recipe as written in the book. I only made half of the recipe as right now there is only me to eat all of this and half of the recipe makes lots of salsa.  I was worried that I wouldn't like it too much because I am not a big fan of cilantro but it tasted delicious.  The Pita Wedges complemented the salsa.  I made my own pita but store bought pita would work well too.  Both of these recipes I will be making often.


Coffee Granita and Salmon Scrambled Eggs
Now these two recipes are perfect for a Sunday brunch on a warm summer day, sitting on your sun porch. Doesn't that sound just wonderful?  Well I didn't really eat them out on my sun porch as the mornings here aren't so warm but both of these recipes are wonderful.   I did find that the granita was a little too sweet and the next time I make the granita I would use a little less sugar.  The Salmon Scrambled Egg is made with smoked salmon and it tasted wonderfully.  Another winner in my books.

  4. I have done a similar black eyed pea salsa before and served it over pork cutlets. YUMMY
    I love the coffee granita as well.

  5. That coffee granita sounds great today, another scorcher today and I could really use the caffeine. We call the Black Eyed Pea Salsa, Texas Caviar and it is one of my favorites.
