Fill the Cookie Jar ~ Firecracker Macaroons

The beginning of July is very busy Patriotic Week.  With both Canada Day and Interdependence Day both countries are busy getting ready and celebrating their countries.   This week also is Fill the Cookie Jar time.  I decided to make a cookie that would be good both for countries as my heart lies in both.of them.

Fill the Cookie Jar ~ Firecracker Macaroons

Why did I pick Macaroons and Firecrackers for a patriotic cookie?  Macaroons are made in many different countries and are slightly different depending on what country you are from... Patriotic!  United States and Canada both are made up of many different cultures ~ a melting pot!  Patriotic!  Fireworks are part of most countries celebrations... Patriotic!

I couldn't use firecrackers in my cookies and didn't have any firecracker shapes.. So I used the next best thing or at least what I thought so.. Hot Tamales.  A hot and spicy firecracker in your mouth.  Red and White for Canada and then Red, White and Blue - (blue skittles) for United States... Patriotic!  The country that I was born in and the country that I am part of now... 


Ingredients:   Printable Recipe
1/2 cup sweetened shredded coconut
2 large egg whites
1/4 cup Zulka Morena Pure Sugar
1/2 tsp vanilla
1/8 tsp salt
1/4 cup chopped Hot Tamales
Blue Skittles - I used only a few
Directions:
In mixing bowl, beat egg whites, sugar, vanilla and salt until completely mixed and mixture is frothy.
Add coconut and combine well.
Add Hot Tamales and Blue Skittles.
Drop macaroons onto cookie sheet.
Bake at 350 degree for 15-20 minutes until tops of macaroon are golden brown.
Cool on cookie sheet for 5 minutes and then transfer to baking rack to complete cool.
Store in air tight container for 1 week.

Baker's Note:  
When I removed the cookies they stuck to the cookie sheet as the candies melted.  They still were very good but didn't stay together as well as I wanted to.
This recipe is only 1/2 the recipe and made 8 big cookies.
