National Pizza Month ~ #pizzaroundup

October is National Pizza Month and I am a big fan of pizza.  I think I could eat it for every meal and there was days when I was single I did... those days are over as I don't get it that often anymore... But when I do watch out.. I eat and eat and eat.  I also love pizza cold, I was the one that the pizza places remembered as I would ask them not to deliver my pizza in their warmers.

No treats, no extra weight for me.. Win, Win.

Crazy Ingredient Challenge ~ Broccoli and Pumpkin #crazyingredientchallenge


Chicken and Broccoli Pizza has to be my favorite type of pizza so when we got our ingredients for our Crazy Ingredient Challenge ~ Broccoli and Pizza, I just knew what I had to make.  Pizza!  I did some searching and found that I could just put the pumpkin puree into my pizza crust and that is what I did.  The verdict... YUM!  I decided to use turkey instead of chicken as I had some on hand... but it would be perfect with chicken too.

Fall Wreath #crafts

Fall Wreath


I have wanted to start a craft section and do at least one craft per week, but that is not happening.  So I will just post as I get some crafts done.
I have been very late this year in getting my Fall decorations up.  I usually get them up before Canadian Thanksgiving but as you can tell that was last weekend and I am still working on it.  I wanted to make a wreath to put on the front door but that failed too.  I couldn't find any bigger grapevine wreaths anyway in the are and I am not sure where I put the extras I had.  Maybe I used them all.
Anyways there are only a few place I can find craft supplies ~ Walmart, Shopko and the Dollar Store.  I started at the Dollar Store and most of the material I found was from there.. So now I have a Dollar Store Craft.

What I used:

1 inch letters "FALL"
small scrap of scrapbooking paper
6 inch wreath
ribbon
leaves (felt) ~ I used 8
couple of plastic flowers
glue- I used Tacky Glue and a Glue Gun.

Directions:
I first glued the letters to the back of the scrapbook paper.  Once dried I cut them out ~ this was the hardest part.  Glue leaves to one side of the wreath.  Arrange flowers and glue to the other side.  Glue 'FALL' close to the top of the wreath.  Make a bow and attach to the bottom... And you are done.
Simple, Easy and Cheap...   This maybe cost about $2.50 total with lots left over to make more and I think it looks wonderful on my fireplace.

Over the past year the 10 of us under the leadership of Tracy we have grown, both personally and as a group.  We strive to bring you articles about cooking, crafts, DIY, travel, reviews and much, much more.  Each one of us brings something different and unique.   I personally feel that we have learned from each other and have all become great friends through cyber world.   But we would have not grown as much or as quickly if it wasn't for the hard work and  dedication of Tracy, who has spent many hours and answered many questions and works feverishly to bring all of  us to the potential we can be.  I love the diversity that this magazine offers to all of us and to our readers.

I am a huge cheese fan so picking only one favorite was very hard for me... All recipes made with cheese are a hit with me.  This week I picked Cheese and Onion Swirl Rolls from Cynthia over at Feeding Big.  I loved her combination of cheese and onions.  Another big plus was that she made the rolls from scratch.  I was hoping to make these before today but just ran out of time.

Cobweb Cookies (aka Lace Cookies) #fillthecookiejar




This month I waiting until the very last day to make my cookies... I am not sure what my problem is ~ either I need more hours in the day or I just need to get more organized.  I am thinking that it is the organization part that I need to work on.  But I did get my cookies made and they turned out even though they are quite large~ but cobwebs are large aren't they.

Pumpkin Spice Syrup

I love this time of year... love the change of colours and the cool crisp air.  Best of all is that it is pumpkin season.  I know that you could have pumpkins all year round as all you have to do is buy a can of pumpkin puree... but pumpkin is the best when fall is in the air.
I also love pumpkin flavour in my tea and coffee.. Nothing beats a Pumpkin Spice Latte or even a Pumpkin Spice Chai Latte..and I have been even drinking more since I made this Pumpkin  Spice Syrup.Lately I have been coming home from work,  making myself a coffee and adding some pumpkin spice syrup , no wonder I don't sleep.

Bird Bath and Feeder

I know that you are probably thinking.... Why is she posting about a bird feeder at this time of year.  The birds are now thinking of flying south and the snow will be falling.  Why oh Why would I write about making a bird feeder.  Well, it is because I just got time to make it.  I did buy the material as soon as Cynthia from Feeding Big brought over this idea to my facebook page. Hers is a butterfly feeder but I decided to make mine into a birdbath and feeder.  Head over to her page for the directions to make her feeder.  I only took pictures of what I used and the end product.

Garlic Cheese Biscuits


One of my favorite places to eat is Red Lobster and their biscuits are to die for.  I just go there for them.  When I was living in Saskatoon, my great aunt and I would go out for lunch and dinner at least twice a month.  On of our favorite restaurants was Red Lobster.  Since moving to the States I am not even sure I have been to a Red Lobster but I can still have my biscuits or at least something very similar.  I received this recipe years ago from a friend.

Slow Cooker Apple and Onion Pork Chops

Apple season is upon us.  I haven't gone picking any this year and we will see if I get any done or not.  My brother has apple trees on his land and as long as the animals don't get them, I should be able to get a few picked.

The other day I had some Granny Smith Apples in the fridge and also pork chops so decided I wanted to make something with them.  This is what I came up with.

Smoothies


We start most of our mornings off with a smoothie.  It is a quick breakfast that I can make for my hubby as he leaves out the door for class.  Full of fruits and yumminess.  I make mine different every morning depending on what fruit I put in.  I love a mixture of fruit and depending on my mood and what I have on hand I use strawberries, raspberries, peaches, mangoes and bananas.  I always throw my fruit that is getting soft into the freezer, just for this purpose.

International Chocolate Day ~ Chocolate Recipes.


Today is 

International Chocolate Day!

I love Chocolate ~ How about you?
Gaining weight is not the only thing Chocolate does for you ~ it helps strengthen your enamels, it is heart healthy, helps you sleep and helps you get out of your funk... So why don't we eat chocolate every day.  The only problem is that you have to eat the right kind of chocolate ~ the best for your body and mind is dark chocolate and unsweetened. 
Today is also Friday the 13th... are you superstitious?
Well, if you are just eat some chocolate and all those superstitions will disappear.. 
Chocolate can help anything.

Cinnamon Wreath with a Twist

I am a big fan of cinnamon rolls, especially ones  with lots and lots of raisins.  My husband on the other hand really doesn't like them.. he is not a big fan of cinnamon ~~~ So that just means more for me.  I don't make them very much for that reason.

I found this recipe on facebook.  Not sure where or who's page that I found it on.  All I did was read the recipe and made it from memory.  So if it is yours please let me know.
I made these last week when  my sisters and nephews came to visit.  It was a great success.  I was given 2 thumbs up for it from one of my nephews and he also said I was the "best cook every".

Hope everyone is having a great week.  I am on vacation or holidays as everyone else but the American's would say.  A couple of my sisters will be coming this weekend for a week, so we will be out playing all week.  I hope the weather will cooperate with us.

I have taken this course at least 4 times so if I don't know it by now I will never learn it.

My Host Favorite 
I am a big fan of iced coffee these days.  I think I like it better then hot coffee.  I always have a picture of iced coffee in my fridge, just ready to add some different flavours to it.  I use my french press when I make my iced coffee and I like to have it sit for at least 12 hours in the fridge.  So when I saw that The Better Baker brought over some Homemade Iced Coffee I had to pick this recipe. You don't have to go out to get a great cup of iced coffee, you can just make it at home for pennies.

Craisin White Chocolate Marshmallow Oatmeal Cookies ~ #fillthecookiejar

I have joined another new facebook group called Fill the Cookie Jar.   This group was started by a good friend, Cynthia from Feeding Big.  Each month we are given a theme and we will have to fill the cookie jar with the cookies we have made.  This month's theme is Kids Favorite/Back to School.  The post will be published on the first of the month.  You do not have to participate every month, which is a nice feature of this group.  If you are interested in joining click on the link:  Fill the Cookie Jar, fill out the form and start baking cookies.. Who doesn't like to bake and eat cookies.
Fill The Cookie Jar

One of my favorite cookies growing up and is still today is Oatmeal Raisin cookies.  I could eat the whole cookie jar.  Last week at work they had Oatmeal Craisin cookies with marshmallows.  I decided that this was going to be my cookie for this month.  I decided to add  some white chocolate, because who doesn't like chocolate in their cookies.  I did some reading about adding marshmallows to your cookies.  One person said to not add them to the dough mixture and just to push them into the center part of the cookies.  I tried that and it got tedious, so I dumped the rest of the marshmallows into the cookie dough and mixed them up.  I tried not to have any marshmallows on the bottom so that they wouldn't stick.  They did work out but the marshmallows melted too much for my liking so next time I will put them in after they have baked about half the time and see what happens.  I will update when I do this.

Craisin White Chocolate Marshmallow Oatmeal Cookies


Ingredients:


1 cup softened butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla
3 cups oatmeal
2 cups flour (I used 3/4 cup whole wheat and 1 1/4 cup white flour)
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp allspice
1 cup craisin
1/2 cup white chocolate (I used Ghirardelli white chocolate and broke it into pieces)
1/2 cup miniature marshmallows ( I cut my marshmallows in half)

Directions:

Preheat oven to 350 degrees
In mixing bowl add butter and sugars.  Mix until smooth. 
Add eggs and beat until thoroughly mixed.
Mix in vanilla.  
In separate bowl mix oatmeal, flour, baking soda, salt, cinnamon, nutmeg, allspice.  Slowly add this mixture to butter/sugar mixture and continue to beat until well mixed.  
With mixing spoon mix in craisins and white chocolate.  
Either add marshmallows at this stage or wait until the cookies are on cookie sheet.  
Using cookie scoop drop cookies onto cookie sheet. 
If you haven't added the marshmallows, add a couple of them now.. pressing into cookie dough  
Bake for 10-12 minutes in 350 degree oven.  Let sit on cookie sheet for 5 minutes before transferring them to a cooling rack.
