Coconut Peanut Cookies - Fill the Cookie Jar


Coconut Peanut Cookies / This and That - gluten free, no bake cookies

This month's fill the cookie jar was to make patriotic cookies ~ well I didn't do that.  I also left my cookies for the last minute and as the weather was hot and muggy, there was no way that I was going to turn on the oven... So I made some no bake cookies, with coconuts and peanuts.

When you hear the word Fall what goes through your mind?  I think of pumpkin, sweatshirts, leaves turning colours and falling and cooler weather.  Fall is our theme for this month's Fill the Cookie Jar and although the weather hasn't isn't cooler yet, it looks like it when we look outside... leaves are turning and floating to the ground.

Fill the Cookie Jar - Cherry Shortbread Cookies

Have you ever halved a recipe but didn't half all the ingredients like salt?  That is what I did with this recipe when I made it.  I had decided to only make half this recipe as I am really trying hard to watch my weight... and all I seem to do is watch the numbers get bigger and bigger.  So to make a long story short... my cookies for this month's Fill the Cookie Jar were just a bit salty...

As I was trying to figure out what type of cookie I should make this month to Fill the Cookie Jar with I had found a cookie that was in a shape of a cup.  It was made with premade cookie dough and used chocolate as the latte and a pretzel as the handle.  And that is how this cookie began......

The beginning of July is very busy Patriotic Week.  With both Canada Day and Interdependence Day both countries are busy getting ready and celebrating their countries.   This week also is Fill the Cookie Jar time.  I decided to make a cookie that would be good both for countries as my heart lies in both.of them.
