Healthy Breakfast for One - {Egg on Bed of Walnuts}

This recipe came from my husband and it is awesome, full of flavour and a crunch with each bite. It only takes a couple of minutes to make so it is easy..great to get you moving in the morning.  The original recipe came from Walnut.Org.

I belong to a facebook group called The Ultimate Recipe Challenge hosted by Kim from The Kim Six Fix.  Every two months we are given an ingredient or a theme and then we go crazy making recipes. This month our challenge was BREAKFAST and we can use any ingredients we want.  I love breakfast and can eat it any time of the day ~ breakfast, lunch or dinner and sometimes for a snack. Breakfast is the most important meal of the day! I have seen some of the some of the other recipes and they look so good.. An easy, healthy breakfast made with walnuts and egg that you can make for one person.


Ingredients:
2 tablespoon breadcrumbs
1 tablespoon thinly minced walnuts
1 1/2 tsp olive oil
1 egg
1/4 tsp Greek Seasoning
dash of salt
1/4 avocado thinly sliced
1/2 roma tomato thinly sliced
1 -2 tsp shredded cheese

Directions:
In a small skillet, toast the breadcrumbs and walnuts over low heat until they start looking brown. Stirring continuously as they brown very quickly.
Once browned, stir in olive oil.
Push the crumbs into a flat bed not too thin.
Drop egg on lower end of bed.
Sprinkle salt and Greek Seasoning over egg.
Cover and cook egg on low heat to your taste.  You want to cook the egg very slowly not to burn the walnut crumb mix. ( I don't like my egg runny so I cooked it for about 2 -3 minutes).
Turn heat off, add avocado and tomato to the top half of the walnut bed.
Sprinkle cheese top and cover until cheese melts.
Carefully loosen the breakfast and lift off pan onto your plate.
