Apple Basil Chicken Panini ~ CIC

Fall is in the air here in the UP.  We are seeing the leaves turning colours and falling quickly to the ground.  I love this time of year, the crispness in the morning, wearing hoodies, pumpkins and apples. Apple is one of the ingredients that we get to work with this month for our Crazy Ingredient Challenge.

The other ingredient is Basil... 

When thinking of what I would make for this challenge I had few thoughts.  One of my first thoughts was to make a drink of some sort (I am still going to do this) and I also thought of making a salad of some sort, but as I was making some basil chicken for my dinner.. this popped into my brain...

Apple Basil Chicken Panini


For this recipes I am going just going to give the ingredients, not the quantity as you can use as much or as little as you want.
Ingredients:  Printable Recipe
Basil Chicken (recipe below)
Apple slices
Provolone cheese
Fresh basil
Dijon mustard
Ciabatta bun
Butter

Directions:
Apply dijon mustard to the inside of each half of Ciabatta bun.
Apply chicken, slice apple, fresh basil and cheese.
Butter the outside of the buns.
Place in a panini maker or use a frying pan.
Cook per instructions of your panini make or grill until golden brown.

Cook's Note:  I used a Gala apple as that is what I had, I think a Granny Smith apple would be good too as it would give some tartness to the sandwich.  The Gala apple gave a sweetness to each bite. 

Basil Chicken
Ingredients:
1 lb chicken (I used boneless chicken thigh)
2 tbsp fresh basil chopped
1/4 cup mayonnaise 
salt and pepper

Directions:
Pound chicken so that the pieces are approximately the same thickness (this makes it easier to cook)
Sprinkle salt and pepper to taste on each piece of chicken
Mix basil and mayonnaise together.
Apply basil mayo mixture to pieces of chicken and let marinate for at least 1/2 hour.
Apply small amount of oil to frying pan and fry chicken until brown or crispy.  You can also bake the chicken in the oven -350 degrees until chicken is brown and cooked all the way through.

  3. You had my attention as soon as you mentioned a drink and I pictured an Apple/Basil Martini! The sandwich sounds great. And of course you could add an additional twist by using lemon basil, or any other unique basil.

  7. This is a delicious Panini. I love the flavors, the apple, basil chicken and cheese and I'm a fan of sweet and savory. A great little sandwich that's big & bold enough for a meal. Delish!
